After I got so much enjoyment out of the Dorito taco salad I made earlier this year, I couldn’t resist the chance to make another salad that is topped with salty, crunchy chips. This time, though, it’s Fritos.
As we move into the warmer months, I thought it might be hard to find the types of soups that fit warmer days. I’m not much into chilled soups —though I plan to make at least one foray into the genre this year — so that also limits the options.
Technically, what makes a wedge salad is cutting an iceberg lettuce head into four wedges. For whatever reason I’ve yet to learn, most recipes for wedge salad have a pretty specific ingredient list: bacon, blue cheese dressing, tomatoes and onions atop iceberg lettuce quarters.
I was tempted to call this the “best pasta salad ever” recipe. But it occurred to me that it’s for sentimental reasons that this is the best. While that means it may not be your favorite, it is the absolute best in my world.
My dad is not much of a chef. He’s great at grilling, and his taco night dinner is still one of my weeknight go-tos. Beyond that, I remember in my childhood many frozen pizzas and bowls of cereal when Dad handled feeding his kids.
Apologies in advance to any reader who hails from the South for this explanation. But this Midwestern gal was oblivious to greens until I met my sweetie, who had spent time in South Carolina.

It’s a little early for peak wedding season, but I decided to make Italian wedding soup last week since I was heading to Indiana for my cousin Katelyn’s exchange of vows with her longtime boyfriend.
It was a pretty busy weekend, except for a brief respite Saturday afternoon. Which is when I looked through cookbooks to try to find a good soup or salad to make this week, and get to work on it during that relative lull in the weekend.
I’m pretty sure this week’s recipe was not meant to be a soup.
