Frito salad

After I got so much enjoyment out of the Dorito taco salad I made earlier this year, I couldn’t resist the chance to make another salad that is topped with salty, crunchy chips. This time, though, it’s Fritos.

The Frito salad recipe came from “Homesick Texan,” a favorite in our household. And the recipe is a delightful, vegetarian and mostly-healthy salad with a lot of Tex-Mex flavors.

But that doesn’t even begin to describe the delightful mix of flavors that are only made better with the addition of Fritos. Though I took the time and effort to home-make the ranch-style pinto beans from the “Homesick Texan” recipe, I’d say it’s not very necessary unless you plan on using the beans for something else.
