R2D2, C-3P0, Chewbacca , Luke Skywalker and even Stormtroopers from “Star Wars: The Last Jedi” have given rise to an 18-week healthy eating initiative by Dole and Disney.
“Unite for a Healthy Galaxy” launched Oct. 8 and features character-inspired recipes, as well as limited edition stickers and a sweepstakes. Dole products will feature movie-inspired packaging, including bananas, pineapples, strawberries, lettuce, salad blends and more.
The movie arrives in theaters Dec. 15. The promotion runs through February.
Recipes created by Mark Allison, Dole chef and director of culinary nutrition, were inspired by characters from all the “Star Wars” movies, including characters, droids and vehicles.
“I have a ‘good’ feeling about this,” said Bil Goldfield, director of Dole corporate communications. “The Star Wars universe is enormous, and its appeal and archetypes span multiple generations. I watched it with my father 40 years ago and it still remains relevant and influential today with my young daughter."
Stormtroopers are credited with inspiring the “First Order Smoothie. ” A chicken and pineapple stir-fry, “Wookiee Noodles,” was inspired by Chewbacca, while “Threepio Salad” showcases quinoa and fruit.

- 2 tablespoons fresh lime juice
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon chopped cilantro
- 1/2 to 1 teaspoon of chili powder
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup pineapple, cut into small cubes
- 1/2 cup cooked quinoa
- 2 cups Dole Classic Iceberg Salad
- 1/2 cup reduced-sodium black beans, rinsed and drained
- 1/2 cup blueberries
- 1 tablespoon pumpkin seeds
Combine lime juice, oil, cilantro, chili powder and black pepper in a medium bowl. Whisk to blend. Stir in pineapple.
Divide and layer in order, dressing, pineapple, quinoa, salad, black beans and blueberries between two 1-quart resealable containers. Sprinkle each salad with pumpkin seeds. Cover and refrigerate.
Let containers sit at room temperature for at least 20 minutes before serving. Shake container before eating to distribute ingredients. Serves 2.
- 4.5 to 5 ounces dry soba noodles
- 2 tablespoons smooth peanut butter
- 2 tablespoons low sodium soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon honey
- 1 tablespoon lime juice
- 1 clove garlic, minced
- 2 cups skinless and boneless rotisserie chicken, shredded, warmed
- 2 cups cauliflower florets, steamed
- 1 cup pineapple, cut into cubes
- 1 teaspoon sesame seeds
- 2 tablespoons chopped green onions
Cook noodles according to package instructions. Drain noodles and return to the warm saucepan.
Add peanut butter, soy sauce, sesame oil, honey, lime juice and garlic to noodles. Stir until sauce is creamy and noodles are evenly coated with sauce. Divide noodles between four bowls. Top each serving with warm chicken, cauliflower and pineapple. Sprinkle sesame seeds and green onions on top. Makes 5 servings. Noodles may also be served cold.
First Order Smoothie
- 1 cup blackberries
- 1 cup raspberries
- 1 cup watermelon, peeled and cubed
- 1 cup ice
- 1/2 cup celery, chopped
- 1 tablespoon honey
Combine blackberries, raspberries, watermelon, ice, celery and honey in blender. Cover; blend until smooth. Makes 4 servings.
