Pearl couscous salad with grilled vegetables and halloumi cheese

While on vacation in July, my mom was quite ambitious in our evening meals. It was most definitely welcome after long days of hiking, but I would have been content to eat burgers and hot dogs.

Or, at least until on the second night, she made something from her Blue Apron subscription and adapted it for our family. It was a simply to-die-for salad, and actually mostly pretty healthy. It was topped with grilled halloumi cheese, which I’d been hankering to try, and it did not disappoint. It also contained vegetables and cooked pasta.

My mom shared her last block of halloumi cheese, so I could make it when I got back to Iowa. I was so excited. Then, I went shopping for ingredients and found everything but the vegetables hard to come by. I checked specialty stores and my grocery store with no luck. So, I did what any relatively young person would do: I ordered the missing ingredients from Amazon.
