Cookies 'n' Creme Brownies

Practically everyone I know loves brownies.  Put down a plate or pan of brownies, and people seem to magically appear. Brownies make people happy — and what's not to love about all that chocolate-y goodness?

Still, sometimes it's fun to take brownies to the next level. This recipe does just that. A friend found it online at Pinterest or some foodie website, and I just had to make it. 

Cookies 'n' Creme Brownies is a rich, luscious dessert and a satisfying, although sweet, after-supper snack.  Or take to work and thrill your co-workers. All you need is a boxed brownie mix, some Oreo cookies and a few Hershey's Cookies 'n' Creme candy bars to make it happen. 


Cookies & Creme Brownies

  • 1 box brownie mix, plus ingredients called for on box
  • 16 Oreo cookies
  • 4 Hershey’s Cookies ‘n’ Crème candy bars
  • Melted chocolate for drizzling (optional)

Preheat oven to 350 F. Line 8-x8-inch square pan with parchment paper. Prepare brownie mix according to directions. Pour into prepared pan. Place Oreo cookies in even rows on batter. Press cookies into batter so they are covered completely.

Bake about 35 to 40 minutes or until a toothpick inserted in the middle comes out mostly clean. Let cool completely.

Unwrap and place candy bars in microwave-safe bowl. Microwave on 50 percent power until candy bars are melted. Stir and pour warm, melted candy bars over brownie and smooth into an even layer using an offset spatula.

Set in refrigerator for 10 minutes to harden. Drizzle with melted chocolate, if desired. Use parchment paper edges to lift and remove brownie from pan, then cut into squares.

Tip: Sixteen Oreos were a bit much to squeeze into a small pan, so I used 12 instead. Also, for a slightly thicker candy coating, use 5 Cookies ‘n’ Creme bars.
